Executive Chef, Le Grand
Originally from Greece, Chef Alex Manos has always had a passion for cooking. Now, armed with Michelin-starred restaurant experience and with his chef brother, Chris, by his side, Chef Alex is ready to bring his own culinary vision to life at Le Grand.
Chef Alex knew that he was destined for a life in the kitchen at a very young age, even helping his dad at a local pastry shop when he was a boy. Growing up in Athens, Greece, Chef Alex dreamed of someday working in a great American kitchen. Upon graduating from Le Monde (Athens, Greece) with a degree in culinary arts in 2009, Chef Alex worked with the opening chef team for Costa Navarino’s The Romanos, a Luxury Collection Resort in Greece, where he contributed to 18 food and beverage outlets on the property. At 22, Chef Alex was ready to follow his dream and meet a new challenge, so he made the big move to the United States where he landed in Los Angeles. There, Chef Alex garnered critical experience working at some of the city’s best restaurants including the two-Michelin starred Melisse (Santa Monica, CA), before moving to the two-Michelin starred Providence (Hollywood, CA), where he worked the line. Under the tutelage of Chef Michael Cimarusti, Chef Alex learned that through striving for perfection in the kitchen and on the plate, fine dining can be an immersive and transformative experience. From Cimarusti, Chef Alex also learned the key tenants of a great kitchen leader: someone who is always respectful and sincere with others no matter what the position.
Following his tenure at Providence, Chef Alex was hired as the opening Chef de Cuisine at Wally’s Wines Beverly Hills. The first restaurant concept from this exclusive, luxury wine and retail store, Chef Alex helped to shape its culinary vision. At Wally’s, Chef Alex balanced his appreciation for fine dining with his personal love of relaxing with friends in an easygoing, but quality focused environment while enjoying outstanding food and an exceptional glass of wine. Wally’s culture would ultimately inform the kind of guest experience that would be manifested at Le Grand.
In his most recent post as the Executive Chef of The Huntley Hotel (Santa Monica, CA), Chef Alex challenged his creativity once again, this time drawing on his Mediterranean roots. While refining his own culinary style and working alongside his brother and Chef de Cuisine, Chris, in The Huntley kitchen, Chef Alex developed the confidence and nuance to go out on his own.
At Le Grand, Chef Alex is excited to showcase a new type of Mediterranean cuisine. Through quality seafood-focused dishes that employ French techniques and classic Greek flavors, Chef Alex brings his fine dining background to the kitchen where he reimagines the Mediterranean-inspired food he knows best. Growing up near the ocean in Athens, Chef Alex takes his love of fresh seafood and brings it to the forefront of the Le Grand philosophy. Through Chef Alex’s vision, Le Grand is set to represent his interpretation of fine dining: one with elevated food yet accessible food, delicious wines, and a comfortable and welcoming environment.
While he is almost always glued to the stove, on his days off, Chef Alex can be found enjoying time with friends and family or taking trips to the beach. As a chef always seeking to improve his craft, Chef Alex also loves to explore Los Angeles restaurants, dream of worldly flavors from Europe, South America, and Asia, and always carries a notebook for when inspiration strikes!
